Whisk together eggs, ricotta, whey and melted butter.
Combine flour, baking powder, sugar and zest,
Mix together the wet and dry ingredients until just incorporated. There shouldn’t be any dry spots, but be careful not to over mix.
Heat griddle to medium heat, brush with a thin coating of butter or oil. Using ¼ cup to portion cook pancakes ~2 minutes per side. Flip when first side is golden brown and edges are set. If second side is golden brown but middle isn’t fully cooked move to a cooler section of the griddle or a low oven until cooked through. Repeat for all pancakes.
